Located on the Culinary Institute of America’s
(CIA’s) Greystone campus, the Still House is being rehabilitated
into a wine education center, the Rudd Center for Professional
Wine Studies. Originally used as the distillery for the former
Christian Brothers’ Winery, ARG designed the new facility,
which includes a soaring two-story entrance lobby, two state-of-the-art
wine tasting classrooms, as well as offices and a kitchen/pantry
for food preparation. A new underground wine cellar will also be
constructed adjacent to the existing building. The rehabilitation
also includes seismic strengthening of the stone structure and
sensitive integration of new systems into the building. Missing
historic features, such as the east/west gables and the roof monitor,
were reconstructed based on historic photographs and physical
evidence. This rehabilitation follows the guidelines set forth
in The Secretary of the Interior’s Standards for Rehabilitation.
